Vince has found a persimmon tree kinda out in the woods on a friend’s property. He loves persimmons and his friend told him he could go pick some. Today he picked a bowl full and I pulled some out, washed them, removed the seeds and “harvested” 1-1/2 cups of pulp to make a cake.
I made a Persimmon Cake and split it between my two pretty loaf pans. One cake goes to the folks who have the persimmon tree and one cake stays with us.
Of course, we had to taste it to make sure it was good before sending one to someone else. It’s good!
Maybe we’ll get back on keto tomorrow. 🙂

Maybe between an apricot and an orange?? I can’t explain it. There are astringent and non-astringent varieties. Non-astringent varieties can be picked and eaten right away. They are a bit more crisp but I wouldn’t say they’re as crips as an apple. Astringent varieties, which are most of the wild ones I’ve seen, are usually smaller and need to be picked and kept on the counter to ripen for a few days. They also are quite sweet but more of a mushy (almost like a mashed up banana texture). Both types are very good to eat but in Texas, where there were no wild ones that we ever saw, we grew the non-astringent variety. Here in Missouri, it isn’t real hard to find wild ones.

Is your recipe one you would share? Love persimmon pudding, but never heard of persimmon cake. I always add extra dry ingredients to the pudding recipe to make it more cake-like.
We had big crop last year, but think hubby said there are none this year. Do have some pulp in the freezer.
