Monday. A new week! Not sure what’s happening with the construction today. The entire deck (not the boards underneath I hope but the decking itself) has to come off and the screws aren’t coming out right so they’re going to try to cut them with some kind of saw. I think it’s going to be rather noisy around here for a few days.

Victorian Motto had their October floss collections – one regular and one primitive, so I ordered those.
Cooking:
Yesterday we finished the prime rib. I fixed steamed broccoli to serve with it.
Videos I Watched:
No videos. I’m listening to Hillbilly Elegy by J. D. Vance. I think I have about half an hour left of that. Not sure what’s next on the list.
Stitching:
Yesterday I finished Cat-o-Lantern and started Love Your Family.
Plans for Today:
I think our meal today is crab cakes. I’ll probably serve cole slaw with it. Something else . . vegetables are where I struggle. I have spaghetti squash. Maybe I’ll roast that then serve it with herbs and make something kinda like salsa to serve with it.

Have you ever toasted chopped walnuts and then added a little butter and poured this over your steamed broccoli? I know it defeats a healthy vegetable but it is a nice change.

Have not but I’ll try it. Walnuts and butter are both keto friendly.

Just had a delicious side at a restaurant the other night. Roasted butternut squash, purple potatoes, and shredded Brussel sprouts. It was a very good combination. We are on a month long trip up in New Hampshire, Maine and Vermont. Lots of new foods combinations for us to try being we are from Houston.

A great veggie side dish is “Awesome Broccoli-Cheese Casserole” from All Recipes.com. Instead of all broccoli I bought bags of “California Blend” (broccoli, cauliflower and carrots). I used 2 bags (11-12 oz each) instead of 3 and used extra sharp cheddar cheese and followed the rest of the recipe & it was WONDERFUL. My granddaughter (who doesn’t like much of anything) had thirds of it. I want to go get some more frozen veggies and make it again, and we just had it a few days ago.
