We’re back on the keto diet. I think I mentioned that already. Vince started a week ago today, weighed this morning and he has lost 18 pounds! I know . . not a pace he will be able to keep up (nor would he want to) but that initial drop really puts the wind in your sails!
Vince is such a junk food eater. For me, my weight problem is a result of what I drink (Dr. Pepper), not so much what I eat. I’m not a snacker. I might grab a cheese stick if I’m cooking dinner and starving and wanting to eat everything in sight . . from raw chicken to chopped onions – I know it’s time for a quick snack. Don’t worry – I never eat raw chicken.
Vince will buy marked down cookies, bread, cakes – everything at Walmart and then, he feels like because he paid $1 for it, he has to eat all 12 cookies. I will usually only eat homemade cookies and even then, I only like them the first day they were baked except for Christmas sugar cookies. I could eat those if they were a year old!
Vince has cut out all junk food – almost all snacks. He will eat walnuts or pork rinds – something like that. He’s doing intermittent fasting. We eat about 2 p.m. and then he has a salad with oil and vinegar about 6 and that’s pretty much all he eats all day. He’s drinking lots of water.
I did buy almond and coconut flour and several other low carb substitutes for things we use but, at least for now, we’re sticking with real food and avoiding baking, fat bombs, etc.
I didn’t start the diet til maybe Friday and I’m still trying to stick with one Dr. Pepper per day. Yesterday I had two. I’ll never lose quickly or have the benefit of reaching ketosis if I don’t give up the DP. I haven’t weighed because the scales in the bathroom had a dead battery. We put batteries on the shopping list last week and Vince forgot to them but yesterday he told me there was a scale in the sunroom that he was using so now I don’t have that excuse.
I’m so proud of Vince. This is hard for him – probably harder for him than it is for me, even with my DP addiction. He had a bit of a heart scare last week, the doctor changes some meds so he’s doing better but he knows the weight needs to come off.
He checked his blood sugar this morning and it was great.
The keto cooking is so much easier than the cooking I normally do. Most days there’s no cooked breakfast. No bread baking, though I enjoy baking bread. No baking. I’m mostly fixing one meat, one veggie and a salad for our meals. Yesterday was the pizza casserole and just a salad. Today will be leftover chicken satay. Vince had grilled the chicken whatever day we initially had it but I’ll put a little oil and butter in a skillet and saute it today. We have leftover peanut sauce. I’ll fry cabbage with bacon and make a spinach salad.
Keto is an easy diet to be on, more so for me since I don’t crave snacks . . it’s just those Dr. Peppers. And, before anyone mentions it, I won’t drink diet anything. I always say if I’m going to learn to drink diet, I’ll just learn to drink water. I have learned that drinking a big glass of water before drinking a Dr. Pepper helps me not gulp the DP down and then wish I had a second one. I’ll get there . . I’ll give them up . . maybe next week.

Getting up at 5:30 to watch my 18 month old great granddaughter, I need caffeine. So I have one Diet Pepsi. Drink water the rest of the day. Sweets are my problem I could easily not buy it but my husband (who has no weight or blood sugar issues) will not give it up. I can’t resist

Hi, my name is Danielle and I am a soda addict……way back when, before knowing better, I could do a 6 pack of Coke in one day (teenage years). I cannot stand coffee – I dont really like water but I make myself drink it, just not enough, and tea is ok. For me it is Coke or Dr. Pepper. So several years ago I switched to the mini cans. The mini cans are 8 oz instead of 12 oz. And I let myself have 1/day. I have found that if I keep up on my water intake during the day, I dont always even finish the one smaller can! Now there are some days that I do have 2 – either I am seriously thirsty – or I need the caffeine – or it is just a hard day in some way….but once that day I over I am back on track..Not as perfect as giving up soda completely – but way better than I use to be! I also do not do diet – both because I cant stand the taste of it – but also because of all the bad press about diet drinks…

Yes. Thank you! I am trying to stick with one can per day. Yesterday I probably had 5 cans because I was outside working, would come in hot. Grab a drink of water, sit down and seriously want a DP. So far today, it’s almost noon and I haven’t had one.

And look at all those things Vince has been doing around the house! He has been doing a lot of work, even if he stood around some. But I doubt he did. The exercise helps to lose the weight also. Love the pots!! Hope Vince continues to do well. You do know the stents don’t last very long and can also get clogged up as well. Tell him to be very careful and make sure he goes to the Dr. if he thinks there is something wrong. Hope he has one of those things you put on your finger that gives the blood pressure and oxygen level. The oxygen level is important as well. If it is below 90 then you should worry!

Thanks, Nelle. He has a new cardiologist here and I think they’re staying on top of things. We do keep an oximeter handy and check those levels often.

Good for Vince! We have been doing sort of modified Keto. We only drink water. Gave up soda a long long time ago. I always keep hard boiled eggs in the frig for a snack. And there is a great recipe for a pizza on the stove top that has only cheese for the crust. Really good.

Do not do special diets for fast weight loss. When you stop the weight comes right back. You go back to the same bad habits. Do make changes in what you eat at meal time and cut out the inbetween meal snacks. Count carbs to loose weight. I have just lost 20 pounds.

His doctor recommended the keto diet to get the weight off quickly and reduce blood sugar and lower cholesterol.
The keto eating plan really is a way of eating that we can stick with. The intermittent fasting has great benefits for many health issues. Very low carb and plenty of healthy fats.
