This probably doesn’t count as the first meal because (1) I seared the mean and cooked the bacon on the induction burner outside because I don’t cook splattery stuff inside and (2) the second side dish is steamed broccoli and I cooked it in the electric steamer also outside because Vince has all the electric plugs in the kitchen turned off. There are carrots under the chicken.
Vince started keto today so I left the potatoes out of the recipe. I know carrots aren’t the best keto veggie but this meal was planned before he said he was starting keto so we have to eat something. The rest of this week will kinda be half keto and half not til I can make a better keto meal plan and get what we need.
I’ll be eating what Vince eats but I’m not giving up Dr. Peppers quite yet so I won’t be losing much, if any, weight.

Plus, women have a harder time losing weight. It’s physiological. Even if you ate the exact same thing, with smaller portions (because you’re smaller), he’d lose weight faster.

When we’re on diets, I try to stick with regular meals and cut out all snacks. We do a lot of intermittent fasting and having snacks in the house doesn’t work out so well for me. I would be interested in hearing about it but I probably won’t try it.

Judy, have you ever tried using a Frywall silicone splatter guard when you fry things that splatter a lot? I feel the same as you and hate getting my stove dirty with messy foods, but the Frywall is a game changer, especially during the winter when it is too cold to fry outside. I have several to fit all my different sized frying pans. They fit around the pan instead of over it like traditional splatter guards and do an amazing job keeping the splatters off the stove. I bought mine on Amazon since my local shopping resources are limited. After use, they can be hand washed or thrown In the dishwasher for an easy cleanup. Highly recommended!

I do have one that a friend gave me but for me, it’s so much easier to do it outside and then walk away. The splatters mostly go on the ground and there isn’t enough mess to make a difference. I also dislike the smell in the house – fish, bacon, etc. I keep the induction hot plate right by the door and there’s a little table always outside. I have a tray I bring everything outside on. The induction hot plate doesn’t get hot so I can bring it back into the garage as soon as I’m done. If it’s a rainy day, I bring the little table into the garage right by the door and do it there. We have a big pedestal fan Vince uses when working in the garage so I turn it on and blow any odors back outside.
There are things where the guard is more effective but I find it easier just to run outside and do most of it.
Of course, I don’t live in Alaska. That would be a game changer and I doubt I’d be running outside to cook, especially during the winter. 🙂
