The garden is growing like crazy. In Texas, (someday I will stop comparing MO to Texas) because of the heat and drought, my gardens were pretty much finished by the end of July. I still have tomatoes and peppers blooming like crazy here.
Yesterday when I finished up with the freeze dryer, I turned it off because I figured I wouldn’t be using it for a while. Normally I just leave it on . . it isn’t running and the switch is way in the back.
Today I cut okra in a friend’s garden and ended up with enough for one full tray and a bit more. I put that in the freezer and figured it could sit there til I had enough to fill the other trays. I went out to my garden to water and the okra needed to be cut. I ended up with enough for another full try for the freeze dryer.
Then I started picking tomatoes. I actually had enough tomatoes for four full trays so I put two of those in the freezer, took out the okra and stuck it in the freeze dryer along with two trays of tomatoes so four trays filled up the freeze dryer and now it’s going again.
By Wednesday I’ll have enough tomatoes to pick to make two trays of pico and the two trays of tomatoes in the freezer will be enough to fill the freeze dryer again.
Our day and night temps are back down low enough that tomatoes will again set fruit so I’m guessing until it gets too cold, we’re going to have an abundance of tomatoes and I am not complaining about that!
