Over the weekend, Marcia of Quilters’ Cache fame, posted on Facebook about making pineapple zucchini. Any other year I would have zucchini coming out my ears but I didn’t plant any this year. Next year I will!
Marcia had made the Pineapple Zucchini and she shared a link to the recipe. The recipe is also on the National Center for Home Food Preservation website.
I only had three quarts of zucchini so I just used 3/4 of the rest of the ingredients and honestly, it tastes just like pineapple! I can’t wait to pick up more zucchini and I’ll definitely plant enough next year to be able to make this and share it with my friends.
I can’t get over how much it tastes like pineapple. Addie loves pineapple so I’m going to see what she thinks about it . . of course, I won’t tell her ahead of time that it’s zucchini.
The blogger whose recipe Marcia (and I) used even has a recipe for a Zucchini Pineapple cake. I’m going to try that soon.

I made pineapple zucchini all the time when my kids were growing up. Got the recipe from a dear friend. My hubby hates zucchini with a passion, but I’d always mix a jar of my pineapple zucchini with a can of crushed pineapple to make a double batch of baked pineapple. He ate LOTS of it when I made ham and baked pineapple and never knew the difference. 🙂 It’s nice to be able to get something by them once in a while! Especially since it’s something that’s good for him for a change!! 🙂

That sounds worth trying. I like her warning not to put in jars larger than pints.

Me too. I used 3 pints but may use half pints next time. The half pints are great for sharing or just eating on top of ice cream.

This is a good share, thanks. I have a recipe for zucchini pineapple bread that is so good and moist. It came from an old First Methodist Cookbook. I tried it one year when trying to use up much zucchini from my garden.

is it just zucchini bread and you substitute the pineapple zucchini? i canned 10 pints today and looking forward to trying that cake. could probably use other ideas as well.
