I already mentioned that the freeze dryer is full of okra. This is the second load I’ve done from the neighbor who has been giving it to us. I had enough leftover today that I cooked it down with onions, jalapeno peppers and seasoning.
Once it was all cooked down and cooled, I put spoonfuls of it onto cookie sheets to freeze.
I ended up with 10 scoops. Once that’s frozen solid, I’ll wrap them in plastic wrap, then put them in vaccum seal bags. I’ll probably put 6 in one bag and 4 in another. I use these in gumbo and I usually put two scoops per pot of gumbo. I’ll make the bags bigger so when I cut it open and take two out, there will be enough of the bag to re-vacuum and seal without having to use so many bags.
It’s so nice to have the okra already cooked and not be buying it out of season, since we mostly only make gumbo during colder months.
I’d love to get at least 20 of these scoops frozen . . that would be enough for 10 pots of gumbo, but I’m happy with whatever I get.

That looks so good, makes me want okra. I love it fried, it really makes gumbo take great. Actually I just love it!

This is such a great idea! I pre-cook okra, onion, and tomato and freeze it in bags. I love the idea of doing the “cookies” to better control the amount.
