Our Little Garden

I try to pick everything out of the garden every day but yesterday there was too much going on. Look how much I got today!

The neighbor brought over another bag of okra last night so that was enough to fill the last two trays for the freeze dryer. I had cut orka the day before and filled two trays so four trays is all my medium size freeze dryer holds so it’s running now. There’s at least that many tomatoes on the counter from a couple of days ago. I will probably go ahead and cut these tomatoes up, remove the seeds and liquid, then cut the tomatoes up and freeze dry those rather than can them.

A couple of years ago, I freeze dried tomatoes, onions, cilantro and jalapeno peppers together, then all I had to do was add a bit of water and I had “fresh” pico whenever I wanted it. I may do some of that too.

Who would have thought we could grow so many tomatoes from one little 4 x 8 raised bed? I laugh thinking of planting 60+ tomato plants in Texas and rarely getting enough to can.
