I’ve hesitated to post our meal plans lately because it seems like one pot of something lasts us all week. We had spaghetti & meatballs for two meals last week and then meatball subs one night – three meals off one pot of food. I saved leftover sauce after the meatballs were gone and am using that in eggplant parmesan today with leftover eggplant I saved after the last time I fried it.
But, since I type each week’s meal plan up and put it on the fridge, I’ll share it here:
Saturday – 8/14:
Meatloaf
Eggplant Parmesan
Scalloped Potatoes – Notice how I’m using the oven for everything at once!
Sunday – 8/15:
Salmon (seared in an iron skillet on the burner outside)

Monday – 8/16:

Salmon (leftover)

Rice Salad (leftover)
Wednesday – 8/18:
Meatloaf (leftover)
Corn
Fried Eggplant
Thursday – 8/19:
Beef Short Ribs (leftover)
Steamed Asparagus
Spinach Salad
Friday – 8/20:
Grilled Steak
Baked Potatoes
Tomato/cucumber salad

Whenever I make larger amounts of something to save for leftovers, my husband just eats it all!

I’ve learned to scoop up what I want to save for leftovers and stick it aside where he doesn’t even see it BEFORE we start eating. If he eats all that’s left, fine, we still have more he didn’t know about.
