We put the white board back up to write the dates I drive my car or Vince puts it on the battery minder because . . well, I just don’t leave the house. It was a week ago Thursday when I left the house and that was just to take Addie home, drop her off, visit a few minutes and drive back home. I think we need a white board for when I leave the house. I should do it more often because the less I do it, the less I want to do it. I have visited with a couple of neigbhors but I didn’t get in the car and go to town and interact with strangers. Heck, I did ride in the car but I didn’t interact with strangers. I always said I could be a recluse but then someone said recluses don’t use the internet so . . I can’t be a recluse but I could easily be an internet using recluse.
I mentioned before the meat market here that has the best meat. They raise their own beef, butcher it on site and have a meat market down in Joplin. J-H Cattle Company for anyone local. We’re not buying too much for the freezer because we do have a whole cow coming but it’s coming from J-K Cattle . . the mennonine farmer.
J-H has a sale almost every weekend and they have the best ground beef. I love their 80/20 and so far, if I don’t eat it every day, I haven’t had any problems with it. They have it on sale often for $1.99/pound. We got that and they had beef short ribs, chuck roast and brisket on sale this weekend so we some of all of that. The ground beef is in tubes and the rest is vacuum sealed and either ready for the freezer or already frozen. I’m fixing meat loaf tonight, because I need to use the oven to make Eggplant Parmesan so why not a meat loaf too. Tomorrow I’ll cook Pioneer Woman’s Short Ribs, which I’ve made before and they are so good. I’ll cook them tomorrow, then leave them in the fridge overnight so the grease will come to the top and harden and I can scrape it off. So, between a larger meatloaf and a big pot of short ribs, I don’t think I’ll be cooking a whole lot.
I did place an order with Walmart that will be delivered tonight and I ordered salmon which I’ll cook tomorrow. I think there are steaks in the freezer I can defrost and I’ll add those to this week’s lineup and that should get us all the way through next weekend!
All that to say . . I haven’t done any cross stitching today.

Grass fed beef is less likely to cause reactions.

I will only eat 100% grass fed beef as a last resort . . which is usually never. I’ve not had a reaction in close to 10 years and the last time I was tested, which I think was 4 years ago, my test was really close to normal. I still don’t push my luck and don’t eat beef every day but, so far . . so good.

We made Barbacoa (chunky chef) with a chuck roast last week, so good!
