Yum! One of my favorite meals too. I make meatloaf fairly often, but haven’t made scalloped potatoes in a couple of years. My husband doesn’t like them, so it’s something I usually only make when we have company to help eat them. The amazing school cooks at the district I taught in made the BEST scalloped potatoes once a month, and it was a favorite of the high schools kids, much to my surprise.

I peel and slice the potatoes. Put about half of them in a greased baking dish. Add salt and pepper. If I’m lazy, I’ll sprinkle flour over the potatoes, pour milk over that, add a second layer of potatoes, do the same thing. Cover with foil and bake at 350 for about 50 minutes. Remove foil, add grated cheese, stick back in the oven til the cheese melts. If I have extra time, and I did yesterday, I’ll make a sauce. Add about half a stick of butter to a pan (depending on how much sauce you need, add chopped onion and garlic, saute, then add flour – 1/4 cup is a good starting point. Don’t brown it but cook it just to get it toasted. Add milk, stir til thick. Then pour half of that over the first half of the potatoes, the rest over the top, add the foil and do the same thing I do with the lazy way.
