Another name for these is Cowboy Candy. We love them on roast beef sandwiches. One pint jar will about last us a year.
I ended up with three pints of jalapenos and two pints of just the juice. I’ll have more jalapeno peppers to pick before frost so I’ll just slice those up, boil them in the saved juice and end up with probably two more pints before summer is history.

Upon your recommendation a few years ago, I made Cowboy Candy. We liked the finished product but the guys at my work loved them. Several made their own batches.

I love it when you tell me things like that. There’s so much I don’t know and I read about it and think . . I wish I’d known that before. I can’t remember the first time we had those candied jalapeno peppers but we haven’t been without them since.
