I’m so happy with my little raised bed garden. Every day Vince tells me that he thinks I’m getting more produce than I did from the entire garden in Texas and he may be right.
I planted two bell pepper plants and I’ve been using them for everything but today I realized I had most of a fridge drawer full of them so I sliced them and had enough to make a whole load for the freeze dryer.
I planted one jalapeno plant and I have a gallon zipper bag full of those. I’m going to make Cowboy Candy tomorrow (if nothing else comes up).
I planted two eggplant plants. In Texas, I usually planted six and most years, never got a single eggplant. I think I’ve picked eight nice size eggplants off the two plants I have here and they have at least four more on them and still lots of blooms.
The asparagus is doing great but I’m not cutting it very often . . trying to let it grow.
I planted two yellow squash plants and they both died.
I have some other pepper plants. I bought a six pack on sale at the end of the season. It’s supposed to be red bell peppers but two of them are longer hot peppers. The other four look like they’re going to be bell peppers.
I have okra that I planted from seeds and I planted it a bit late so I’ll be surprised if I get much from it.
The tomatoes are doing great. I may end up having enough to can a couple of loads in the big canner. So far, the extras, I’m just skinning them, putting them in bags and freezing them til I get enough to can.
I’m glad Vince built those raised beds for me. It gives me just enough garden to make me happy without being too much work.

One son planted two Jet Star and two Tom Thumb, and we got one volunteer, tomato plants. The other local son threw in the last of their dad’s cucumber seeds and we got two plants. Can hardly keep up with the cucumbers and the only tomatoes ripening are the little ones. Oh, yes, and onions of which I’ve pulled/dug about half. Nothing like the gardens of the past from this place! One neighbor called asking if I had any tomatoes I didn’t want. Not even getting what I do want! I’ve taken cukes to the Plant a Row for the Needy drop sites. The lady there said, ‘tomatoes aren’t coming in for anyone yet this year’. At least that’s nice to know! But disappointing. I’m glad you are getting your gardening fix. I think you have everything you could want there! Life’s wonderful!
