Last night at dinner, Vince said “You must be feeling better. You seem to have your appetite back!” That’s when I realized I had eaten a bowl of cereal when I got up so I could take my antibiotic. Then I never ate again til dinner but, yes, I never had the usual late evening fever and I felt like cooking, though I didn’t do a very good job of taking pictures.
I did make focaccia bread with rosemary and black olives.
My Facebook friend, CJ, had mentioned the other day how good these anchovies were so I ordered some. They were every bit as good as she said they were. CJ posted how she made her pasta sauce but I made mine a bit differently.
I drained the stinky little fishes on paper towels, then mashed them up with a fork. In a separate bowl, I made a bit of pesto with basil, olive oil, garlic, pine nuts, grated parmesan cheese, salt and pepper. I mixed the mashed up fish with the pesto, added a bit of tomato paste from a tube, and that’s it.
I served it over hot pasta so the pasta heated the sauce. We ended up dipping the focaccia bread in the pesto/anchovy sauce. Delicious.
We ordered more of those anchovies. That was a super quick and tasty meal.
CJ does some crazy stuff with chocolate but except for that, the recipes she shares are always hits in our house.
