Maybe I am feeling better . . I cooked! Chad and Nicole stayed here Saturday so I cooked breakfast Sunday morning and have cooked since. Here it is Thursday! You know I feel bad when I don’t even cook. But, staying in bed a lot and off my foot has really helped my foot.
I didn’t cook anything fancy. I love hashbrown casserole. That is one of my all time favorite comfort foods. I know . . not the healthiest and yes, I used storebought canned cream of chicken soup. I cook more bacon just to make sure there’s nothing remotely healthy about this recipe. I grate onions and quickly saute them in the bacon grease and then . . sit down . . I dump the grease and onions into the casserole. It isn’t like there’s a cup of bacon grease in there.
We had three chicken breasts that we hadn’t cooked when Chad was here so I stuck those in the freezer. Tuesday night Vince got those out and grilled them but I didn’t eat so two of them were still in the fridge. I sliced them in half to make four, added BBQ sauce, stuck them in the oven with the hashbrown casserole and fried eggplant.
Along with sliced tomatoes, it was nice meal and I felt like I had accomplished something but promptly went back to bed and slept a couple of hours.

I know you had your vaccine, but is there any possibility it’s a breakthrough case of covid? I have seen on the news that SW Missouri is having quite a few cases.

It’s possible but the doctor seemed to think it was more of an allergic reaction. I’m checking my oxygen levels and since I am feeling better, and having less or even no fever, I don’t think it’s covid but I will keep an eye on it.

Is Addie still with you? I know Vince was spending time entertaining her. I hope you are not having to feed and worry about her. Wish I could be there to help you.
I have been very worried about Lady B and the Colonel. He is in the hospital again and now on a ventilator and sedated. Lady B is asking for prayers. We are all so concerned for him.

Addie is still here. She’s actually been helping around the house and no trouble at all.

Hope that you are feeling better Judy. What happened to your foot? Your crosstitch piece is looking great. I ordered the Changed World and will be working with silk for the first time. I also ordered another but the bame escapes me…something about refuge? I have never done samplers before and hope they come sooner than the 4-6 weeks they quoted. Again, get better quickly.
