Yesterday evening I browned one of the Pike’s Peak roasts we bought from the meat market here and put it in the slow cooker. I haven’t used my crock pot in forever. Last night when I got in bed, I was thinking about how much I used it when I was a young wife. When I got married, I had never so much as boiled water. I knew nothing about cooking — totally didn’t have a clue. I remember three things that I cooked over and over in the crock pot. One was a whole chicken, with potatoes and carrots and probably chicken broth or maybe water; the second was round steak with either cream of mushroom soup or golden mushroom soup and the third was a pot roast with potatoes and carrots. Since there were just two of us, those three meals lasted us the entire week. I hate to admit it but I probably cooked those same three dishes over and over for a couple of years. I never use the crock pot without thinking about how much I used it back in those days and how awful the food must have been – especially having it over and over.
I think my cooking has improved a bit .. I hope so anyway.
I had a packet of some kind of slow cooker seasoning for roast. I wish I’d paid closer attention because it was really good. I seasoned the roast, browned it, then put it the slow cooker, added the packet and some water and cooked it all night. This morning I took the meat out, added carrots and potatoes and cooked those on low for 4 or 5 hours. The meat was now cool so I sliced it and put it back in the pot with the juices, potatoes and carrots.
Addie hasn’t been here in a couple of weeks an Nicole called and said Addie was wanting to come here today so they were going to run down and see me. I said “Good! Stay and eat. We have roast, carrots and potatoes!” They did so it was a fun afternoon. Chad and Nicole wanted to go to the flea markets but Addie wanted to stay here so they went shopping, came back and visited for a while and now they’re back home.
I love living close enough to have those kinds of visits.
