We could still have a thunderstorm tonight but nothing like we had today. I talked to Nicole and she said “Vince may have to build an ark!” I don’t know how much it rained today. The first little storm that came through dumped 2″ in less than one hour and the usual places that flood did flood. I carefully watched the road by the house, as far as I could see out the window, and there was never any water across it but today wasn’t some of the most serious flooding this area seas.
The electricity stayed on once it came back on after having been off for a couple of hours. I saw pictures on Facebook and there were trees down and utility poles down not far from here so that’s what took out our power. Thank goodness for the linemen who go out in all kinds of weather!
I didn’t take a picture but the Grit Cakes with Pork Grillades was so delicious. That’s a great recipe to make when you’re having guests because you make the grits ahead anyway and let them get cold before frying/browning. The pork dish would probably be better the second day after all the flavors blend. The only changes I made to the recipe were (1) I added two chopped jalapeno peppers in with the onions, celery and bell pepper and (2) I didn’t use sharp white cheddar – I used mild yellow cheddar because that’s what I had and I’m not a huge fan of sharp cheddar.
Next time I might use pork boneless ribs (country style ribs) or even a pork loin. There was a lot of fat on the shoulder. I ended up putting it all in the pressure cooker for 25 minutes because the power was off so much and I couldn’t get it to cook as long as I wanted on the stove.
So . . obviously, it’s a pretty forgiving recipe.

Glad you all made it through OK. Our power dimmed a few times but never did go out.
