Sorry there’s not a picture and it was so pretty! I sat down to eat, thought about taking a picture, got up and got my phone, came back and sat down and started eating. My plate was completely empty by the time I realized I hadn’t taken a picture.
Yesterday I made a dozen English muffins. We gave some to the neighbor and some to a friend and that left us with just enough for a tuna melt last night and Eggs Benedict this morning so I stirred up another batch of English muffins last night and made those after breakfast . . before we went to town.
This is the recipe I used and it was so easy and so good. We also had grits because dinner tonight is served over fried grit cakes so I figured we might get to enjoy them too. The real grits (not instant or quick cooking) arrived from Amazon yesterday. $12+ for two pounds. That’s more than steak or . . more than steak used to be. I’m afraid to see how much it costs these days. It was worth it. Vince just went on and and on about how good they were. He doesn’t like the quick cooking grits.
A friend from South Carolina is sending me more real grits so I won’t have to worry about running out for a while but I’m going to try to make sure we have them always in the house and we don’t have to use quick cooking grits ever again. I can buy real grits in Louisiana, or I could the last time I was there. We always bring back tamales, sausage and boudin so now we’ll have to add a few bags of grits to what we haul back from there.

It must increase the fun of cooking when your husband gives you such enthusiastic compliments. I had a yummy variation on Eggs Benedict at a local restaurant last week when I took my sister-in-law to a doctor appointment. They called it a Bacon Bennie – with thick cut bacon instead of the Canadian Bacon. And it had the yummiest Hollandaise.

Yes! I love it when he compliments my cooking or even when he asks for me to fix something I haven’t fixed in a while. Even more, I love it when I hear him telling other people how much he enjoys my cooking.
We didn’t have Canadian Bacon in the house so we had plain ham on our Eggs Benedict but I like the bacon idea because I like bacon more than I like ham.
We were eating breakfast in a local diner this week and they had Eggs Benedict on the menu and I wanted them but figured mine would be so much better so I didn’t get them there.

i’ve never had instant grits, only the long cooking type. it’s always a treat! i can only assume that instant grits would be akin to instant oatmeal … YUK!

They’re almost two hours from us and going through Bella Vista is not fun. We’re actually able to get some of their products sometimes (not always) at Walmart. I placed an order with them earlier this week because I have to have whole grain cornmeal to make salt rising bread and Vince wanted some of that so I did order grits along with a few other items.

They make stone ground grits, cornmeal, cookie mixes, etx, in an old mill that was taken over by Cornwallis during the Revolutionary War. A very neat place, with very nice products !

I never even thought about the Old Mill at Guilford. They’re about 15 minutes away from where I live. I haven’t been there in quite a while. Didn’t even know they did mail order. I guess I’ll have to take a little ride.
