I am not one to give marital advice but this little tidbit of personal experience may come in handy some day! I haven’t cooked more than 4 or 5 times in the six or seven weeks Vince has been here. It’s like my cooking desire and my brain were just saying NO! I’d plan to cook and then I’d be running a bit late and I guess Vince was getting nervous that I might not be going to cook and he’d say “Want to go get something to eat?” and I’d say yes.
So, tonight I cooked these Vietnamese Shrimp Rice Noodle Bowls and Vince couldn’t stop going on about how good it was. He kept thanking me for cooking. He even said “I think I’ll keep you a while longer!” 🙂
My advice: Stop cooking completely for a week or a month . . then make something and you’ll feel very appreciated!
Seriously, this recipe was so easy. Most of it was prepped ahead of time. I washed the lettuce, picked the cilantro, parsley and mint, washed it, sliced the cucumbers and carrots, chopped the peanuts and made the dressing this morning. Since the noodles needed to be cool, I even cooked them ahead.
I didn’t have rice noodles but had some other kind of oriental type noodle so I used that and it worked just fine. I had shrimp so I used them but it would be equally good with small chunks of white meat chicken fried.
This is definitely something I’ll add to my future menu plans.

That looks so good, I bookmarked the recipe. I’d like to commend you for placing links in your posts rather than copying the recipes.
I notice you said cilantro, mint, and parsley. Did you use parsley in place of the Thai basil?

I meant to go out and get Thai basil (I have it growing) and totally forgot. I kinda combined recipes. The first one called for cilantro and parsley, but not basil so I hadn’t picked any basil. Then, when I starte combining the two recipes, I forgot to get basil. If I had remembered, I would have used it too.

p.s. With the fish sauce, I imagine this is something Addie might be dubious about?

… Check the net for alternatives to fish sauce. Coconut aminos or Worcestershire sauce are good substitutes and lower in sodium than fish or soy sauce.
I use Big Tree Farms brand of coco aminos and they have a ginger lime version that is good for marinades and sauces.

If Addie didn’t see it at first she would not know. Then tell her after. Toby doesn’t like garlic or onions. Honey, you’ve been eating them thru our entire marriage…lol. I just don’t let him see me chopping them. He LOVES black garlic however. My grandmother cooked “weird” foods and had me try them. I admit tripe and sweet bread were good. I never would have tried them if I had known what she was serving. Today I will try anything.
