This morning I was in the kitchen cooking. Chad and Nicole come on Sundays, have a late lunch with us, then take Addie home. While I was cooking, Addie walked into the kitchen, saw me cooking, had a puzzled look on her face and said “Are my parents coming to get me today?” I said no. She looked even more puzzled and asked “Why are you cooking?” I told her . . I cook a lot, which might have been true before moving here. She said “I never saw you cook except on the days mommy and daddy are coming.” Ouch! I must do better.
Then, I almost lied but had to admit . . I’m cooking soup for tomorrow’s meal.
It’s Gina’s Italian Sausage Soup and I’m making it because I have several bags of fresh spinach from the Farmers’ Market. I also had Italian Sausage in the freezer. I didn’t have fresh zucchini but I had a jar of freeze dried from my garden in Texas and it will work just fine.
In my defense, I am cooking . . kinda . . for dinner today. Addie loves lasagna, as does Vince. I do not! I suppose it’s a bit selfish of me but both of them are happy with frozen lasagna so that’s what we’re having. I am making homemade rolls and will make a salad and fried eggplant.
I really do love to cook and I miss cooking but I don’t like cleaning up. The plantar fasciitis is some better – not totally gone and only better as long as I kep shoes on with inserts. The minute they come off, I’m limping and moaning again. By the time I cook, then clean up, I’m usually hurting, even with wearing the shoes and inserts so we’ve been going out too much. Plus, we end up going to town for something and that leads to something else, then the next thing you know, we’re in town and hungry. We’re going to do better. Not only do I miss cooking but I miss eating my own cooking.

Judy, see if you can find a Strasburg sock. When my plantar fasciitis is bad, I sleep with the Strasburg sock and it helps a lot after a few days. Keeping that tendon stretched is the key.

I didn’t. My doctor said the tennis shoes I was wearing were some of the best but did suggest orthotic inserts which I got.

I had planta fasciitis and tried every remedy in the book. The only thing that worked was radial shock wave therapy from a chiropractor. That was maybe 12-15 years ago and it has not bothered me since. It took only 3 treatments. I delivered mail for several years after that and my foot never hurt. Too bad that my knee gave out but my foot never hurt. No pain what so ever. Try it!

Judy try a pair of HOKA running shoes. I have plantar also and they have helped so much. I broke 2 bones in my heel and got these shoes after it healed. They are kike walking on cotton. I had New Balance and Brooks before but these are so much better. I like to go barefoot but now I just get up put these on because they feel so good. Just try on a pair even if you don’t buy them. They are designed by 2 long distance runners. I just got the low end because I didn’t need all the running perks I just needed the support and cushion. I got it!
