Chad and Nicole usually eat here on Sundays. They come to get Addie and we have our meal around 3:30 p.m. That gives them time to eat, and get home in plenty of time before dark.
Usually I’m rushing at the last minute to get things done, the kitchen is a mess, I’m flustered and eating doesn’t alway sseem relaxing. I think I lived in Texas and didn’t have guests for dinner for so long that I lost my ability to get a meal on the table and feel organized about doing it.
I’m proud of myself today. I ended up making a smoked chicken mac and cheese. It was ready an hour before time to put it in the oven.
I made a nice salad with all ingredients from the farmers’ market and eggs from Chad’s chickens.
I made homemade Thousand Island Dressing and Ranch Dressing, though the ranch is from the packet that you mix with mayo and milk.
I have the corn all shucked and cleaned and ready to go into the boiling water.
For dessert, I made tapioca pudding and will serve it with sliced strawberries and whipped cream.
This dishwasher is empty. All the pots and pans I used in cooking are washed and put away. The table is set, including dessert dishes. Yes, I’m proud of myself getting this all done and not running around like a chicken with its head cut off trying to get dinner on the table.

Growing up, Sunday evening we didn’t have a meal. Dad usually popped a couple of batches of popcorn, and that’s what we shared. (All 7 of us.) We had our big meal of the day for lunch after church and Sunday night was Mom’s night off! 🙂 When I got married I continued the tradition,, although for us, Sunday lunch was usually a stop at one of the local fast food restaurants on our way home from church…thus, I got ALL of Sunday off!! 🙂 Hubby was used to being waited on when we married, but it didn’t take him long to realize that I expected a day off and if he wanted to eat, he knew where the kitchen was! 🙂 🙂 🙂

The family meals with Chad, Nicole and Addie . . that’s what I came here for so I’ll gladly cook so I can share the meal and time with them. Since I’ve never worked since Vince and I were married, I’ve always felt like every day was a day off for me; and since I love to cook, I also don’t feel like that’s work. Serving a good meal for the family, and one Vince appreciates is what makes me happy . . any day or every day.

The meal looks so yummy and filling. And cooking for family is just so heart warming. We finally tried the corn slathered in ranch dressing and baked in the oven and it was good. I made the cookies with a roll of sugar cookie dough at room temp mixed with 1/3 cup chopped dried cranberries and 1/3 cup chopped pecans. Oh boy they are so good. And where are the Addie pictures??

****I know how you feel about fixing dinner for a group. I prefer to clean up the kitchen as I go as much as possible, because I just hate having to get up from the table and clean a dirty kitchen. It takes away from the pleasant dinner experience.
