Necessity is the mother of all invention. Dinner today required invention. Since I cook for Chad and Nicole on Sunday, I like to make things that have leftovers that Chad can take in his lunch. You know how it is with moms .. always thinking about her child! I wanted something I could make ahead and not be standing over the stove trying to serve a hot meal once they arrived. I had a chicken I had smoked on Thursday and we still hadn’t gotten around to eating it.
So I made Smoked Chicken and Bacon Mac & Cheese!
I used a different Mac & Cheese recipe – this one. I liked it better than the recipe I had been using. I pulled all the meat off the chicken and used all of it, but it was a fairly small chicken. I cooked 7 slices of bacon and crumbled that. Otherwise, I followed the recipe exactly. Everyone seemed to love it.
I had it all assembled and in the baking dish so when they called to tell me they were leaving their house, I turned the oven on. It took about 10 minutes to heat up, baked the Mac & Cheese about 40 minutes – worked out perfectly!
