Sunday I took a chicken out of the freezer and stuck it in the fridge. I had planned to smoke it on Tuesday. Monday morning I took it out to season and it was still frozen fairly solid and then Wednesday I knew we were eating a big breakfast out late because we had to get Vince’s car and he wanted to go to Cracker Barrel so last night I took it out and seasoned it to smoke it.
This morning Vince wanted to go to town. We usually eat fish on Friday but tomorrow the mattress is being delivered and I have to go get Addie so Vince asked if I wanted to go to Walmart with him and then go eat fish. Couldn’t turn that down so we went to Walmart, got a few things, went to get fish . . the place was closed for some kitchen repairs. Vince needed to go by O’Reilly’s to get freon for the guy to work on his air conditioner (told you . . it never ends with that car!). Before he went in, he said “We can go to the food truck you like.” What? I’ve been begging to go to Mosa but Vince is pretty anti-food truck. I went to their Facebook page to make sure I knew what I wanted so Vince didn’t have to wait 5 seconds for me to make up my mind and saw this:
It wasn’t our lucky day with restaurants. We ended up going to eat Mexican . . which is always good.
Now . . the plan is . . the chicken will smoke. I’ll bring it in, let it cool a bit, put it in a baking dish, cover it and stick it in the fridge. Tomorrow, I’ll get Vince to stick it in the oven on convection about 30 minutes before I get home with Addie and we’ll have smoked chicken, corn on the cob and beanie weanie for dinner.
P. S. I do NOT like the mechanic who did the inspections and oil changes. He asked Vince – Have you had the timing belt changed on this car? Yes. Do you change the oil regularly? Yes. Then he told Vince . . this engine will run forever!
Seriously, we were lucky to pick such good years to buy the Honda and the Highlander .. unless you sometimes think you might want a new car .. which is never happening but, since we don’t have to spend money on a car, that’s more money for my hobbies, right?

Just curious – we own a 2005 Honda Civic and a 2006 Toyota Highlander, and both vehicles are wonderful. Bought the Highlander new, and the Honda used, but they both have been basically bullet proof for us. What year are your Honda & Highlander?

Honda is 2001. Highlander is 2007. Both were bought new. We bought the Honda in Indiana and the Highlander in Joplin, MO. Funny we have almost the same vehicles.
