We had three big freezers full in Texas. We bought the MO house in August and it was in October when the first load, including one freezer, was delivered here. I had been working out of one freezer for two months and was able to put everything that remained in one freezer into the other two freezers, or the freezer part of the three fridges we had. When I came after the freezer was delivered, I brought three coolers full of food. That made a bit of a dent in the food that was left in Texas. In the remaining six months, we managed to use some amount of food but Vince continued to buy food that ended up in the freezer. I think he gave away a TON of food.
When he got here last night, we got a few things out of the pickup but much later in the evening, he said “I have two coolers full of food. We need to get that in the freezer. Chad had brought me 15 pounds of shrimp from Louisiana and I had enough in the one freezer here that it was pretty full so I held my breath for a minute wondering what I would do if it didn’t all fit. I had a couple of big bags of rice and I was able to take that out and make room but that freezer was stuffed! This morning the movers plugged in the fridge and freezer for us so I began moving some of the stuff from the freezer that was already here into the one just delivered.
Last night, I was tired and Vince was tired but I was shocked at the amont of bacon he brought. I asked . .
Me: Vince! Where did all this bacon come from and why so much?
Vince: We like to pick our own bacon.
Me: Huh?
Vince: Since you like doing curbside pickup and we’d rather pick our own bacon, I decided to pick some good ones for us.
Me: I’ve never been disappointed with the bacon the Walmart shoppers chose or me.
Vince: Well, I like to pick bacon myself.
Yes! He does! I can do half my shopping while he’s going through every package of bacon on the store fridge shelf.
He brought over 40 pounds of bacon! 40 pounds! How long does it take to eat 40 pounds of bacon. We may eat a couple of slices twice a week for breakfast, I may cook a couple of slices once a week if we’re adding it to sandwiches or burgers and I may use a couple of slices cooking green beans. When I buy bacon, I cut the pound in half, vacuum seal half, freeze it and work off the other half. Since all of this new bacon was still frozen, it’s frozen in full pound packages.
It will be a very long before I have to buy bacon again.

Make some bacon-onion jam – it is great and there are a lot of recipes out there.
BTW – how are Rita and Boots doing with Vince’s return to the home?

Perhaps you should always ask Vince to “get out some bacon” when you need some for a meal. Don’t touch it yourself.

This made me chuckle…I like bacon, too, but not the mess it makes so I like to bake a pound or 2 in the oven, then put that in the freezer. So nice to have it ready for burgers or breakfast. Or just because!

That’s how my husband bought bacon too!! Very particular! One of our sons cooks all their bacon on the grill that’s on their deck. No mess, stove, oven or kitchen!
