One thing is certain: Once Vince gets here, the eating habits are changing. It may not be a keto diet but I’ll definitely do better than I’ve been doing. For the longest time without Vince here, I did pretty good about cooking and eating healthy. Lately . . not so much. With Addie here, I’m doing horribly. She’s a very picky eater. They don’t eat a lot of the things I cook so it’s easier, though not better, to either fix what she’ll eat or get something out. Thursday night we ate Mexican. Friday we had sushi. Today we had Shake & Bake and fries.
Also when Addie is here, almost every evening we have dessert.
You know how I love the mini loaf pans. The last time I made monkey bread, I made the dough balls, rolled them in cinnamon and sugar, put them in the mini loaf pans and froze them. Then, once they were frozen, I took the loaf out of the pan, vacuum sealed them and put them back in the freezer. Yesterday I took a frozen loaf out, popped it back into a mini loaf pan, let it defrost and rise. Then I heated melted butter and brown sugar, poured it over the top and baked it.

Some of the monkey bread went into a bowl, added ice cream and then scooped out some of the gooey brown sugar/butter mix which turned to a hard candy on top of the ice cream.

Next was sliced strawberries and whipped topping.

Addie loved it and said she wants this EVERY night when she’s here. I’ll admit it was pretty good. She actually wanted to melt one of the Gold Brick eggs and pour the chocolate over the top and let it get hard. I was tempted but we decided against that idea.

That girl loves sushi. I keep telling her if she was as picky when she was introduced to sushi as she is now, she would be missing out on her favorite thing.
