It will probably take years before these kind of occurrences become normal and not exciting for me.
Chad, Nicole and Addie are on their way back from Louisiana. They were planning to be home between 7 and 8 p.m. I got a call this afternoon that they were going to pick up dinner in Joplin about 6, bring it by my house and eat with me. How special is that? VERY special and exactly the life I’ve missed for too long.
I told them I had just put a corned beef in the pressure cooker so why didn’t they just come here and eat that. Knowing it isn’t Chad’s favorite and also knowing he would probably need food for his lunch tomorrow, and the corned beef was a small one . . something I bought when I thought I’d be eating on it for several days, I grabbed two pounds of ground beef out of the freezer and am making meatloaf. I’ll also make scalloped potatoes and open a jar of green beans so there will be plenty for his lunch.
I’ll try to have it ready to put on the table when they arrive, they can eat and get back on the road. I know they’re tired. Addie has school tomorrow and Chad and Nicole both have to work. They usually come back from Louisiana on a Saturday and have Sunday to rest but my uncle wanted them to stay an extra day since they were a day late getting there.
I’ll be happy to see them, even if it’s only for a few minutes and to get a warm meal in their bellies.

My granddaughter lives nearby. It thrills me when she comes by to have a meal with us.

Family is everything so I totally get your excitement. Was wondering if you have a favorite meatloaf recipe. I completely trust your culinary taste as you have not steered us wrong yet.

My favorite is Sweet & Sour Meatloaf. If you click on the Menu tab above, it’s on that first menu (January 26 I think is the date).

Thank you. Hoping to try it this week.

That’s so wonderful…exactly why you made the move! We got back home from Disney on Saturday (where we felt perfectly safe and got to see our youngest!) Our daughter brought the granddaughters over yesterday and while she was there she got a call saying that a friend they had over on Friday for the first time in over a year had tested positive for Covid, so she and the girls were exposed. So, no matter how careful we were, we got exposed in our own home! Fortunately we’ve had our first shot and get our second on Friday. My daughter can’t get one yet, although her husband as a police officer is fully vaccinated. I worry for the babies though…
