My friend keeps buying beignets at Popeye’s and she keeps talking about them.

Last night I could stand it no longer and made some for myself.

I only make half a recipe and it’s good to keep in the fridge for a couple of days so I’ll fry up a few each day til it’s all gone. The dough isn’t so sweet that I couldn’t pan fry a bit of it for breakfast, which I think I might do today!

    LOVE beignets!!

    A few years ago we went to NO for a few days and one of my favorite (hard to pick just one place to eat) places was Cafe du Monde for some coffee (DELICIOUS) and beignets. Should have worn an apron over my clothes for all the powdered sugar that was flying. Needless to say, they were finger licking good.

      That’s the ONLY place to get them! Everyone who goes to N.O. has to go there! ๐Ÿ™‚

    Is your friend in LA? Would Popeye’s in KS have beignets?

      My friend is in LA and Popeyes here and in KS may have them but I’m not eating food I didn’t cook so if I want it, I have to cook it.

        I looked at the recipes, etc. and decided I’d settle for buttermilk waffles! They were good, very good. I’m only eating my own or something that comes from one of the sons’ homes now myself!

    They DO look yummy, but they also look very caloric as well…. I’ve never had beignets, so there’s no way I could crave them – thank goodness!! ๐Ÿ™‚ I’m afraid, if I’d ever had them I would be a lost cause!! Good thing I live in PA. We have lots of specialty pastries in the area from a variety of cultures, but beignets aren’t amongst them. Something to look forward to if I ever make it down South!! ;

  • Metropolis – Using Madelinetosh Chunky in Curiosity.
  • Superbloom Cowl – I made one of these as a Christmas gift but I’d like to make one for me. Miss Babs Yowza Mini Set, which I have.
  • Lizard Eyes – This look so interesting. Wollmeise – I already have it.
  • Rattlesnake – I need this to remind me that I survived living in the wilds of Texas for 9 years. Pretty sure I have yarn for this.
  • Lumber Jill Cowl – I have the yarn.
  • Heather Hoodie Vest – I’ll use Cascade Eco+ in Valentine.
  • The Weekender – Not sure about yarn for this one.
  • Homebody – I’ll probably use Kathmandu Aran 100 or Cascade Eco Wool.
