We have quite a bit of chicken jambalaya that I canned several years ago. I had made sure to leave some jars of food for Vince and he called me the other day to ask how to fix the jambalaya. I told him and then I couldn’t stop wanting jambalaya but didn’t want to go digging for it.
Yesterday when I was emptying boxes in the safe room, guess what I found! A case of chicken jambalaya so that’s what I had for dinner yesterday.
I don’t add rice to the jars so I strain out the liquid from the jar, measure it so I know how much rice to add.
I opened a jar of green beans that we had grown. That was a fantastic meal and I’m happy there are leftover beans and jambalaya for the next few days.

We ate the Green Enchilada Chicken soup last night and really enjoyed it. I served it over rice and added some leftover hominy to his bowl. Thanks again for the recipe. I think next time I will add a couple more chicken breasts to cook and use them in another dish as the flavor was so good.
