There were plenty of leftovers in the fridge for dinner but this evening I wanted a sandwich. I had deli roast beef (the pre-packaged kind – not from the deli) so I used a homemade English Muffin, toasted it in a skillet, sauteed part of an onion and a jalapeno pepper, used some weird mayo that Chad likes and bought for me and horseradish mustard.
Add a few chips and some of the pickles from Atwoods that I love and it was a yummy meal.
Maybe not the healthiest but it was quick and it was good. Sometimes it doesn’t bother me cooking a whole meal for just me and some days, it makes me more lonely to realize I’m having a great meal with no one around to enjoy it. So, this little sandwich was just what I needed this evening.

That’s Japanese mayo you have there! We ate it for years when we lived in Japan, now the kids get pretty excited when we see it locally!
