I was really nervous about that pork crown roast that I was fixing for dinner. First, I had never cooked one. Second, I had major doubts whether it would fit in the small smoker and third, I doubted that a 15 pound roast would really cook in 3 – 4 hours.
I seasoned it yesterday and stuck it back in the fridge. This morning I made a mix of chopped parsley and garlic and loaded the top up with that.
I had to push really hard against the door to get it to close but I got it closed. It was 12 degrees when I went out this morning and I know we’ve used the smoker when it was that cold but I couldn’t remember how well it worked – if it would take longer for the meat to cook.
We had planned to eat at 2 so I put it on about 8:30. That gave me some extra time . . but not much.
By 12:30, it had reached the appropriate temp. I turned the smoker off and left it in there til about 1:30 and we ended up eating then.
It turned out so perfect!
It was a great Christmas dinner and a great Christmas Day. Chad, Nicole and Addie have gone home. I’d like to take a nap but it’s too late so maybe I can hope to be in bed early tonight.

It looks delicious. One thing we didn’t have was rolls but wasn’t about to get out of line to get any while at grocery store. It can be fun to try something new and so it was good to hear the details. We got a smoker a few years back when I first started following you. Its been a couple of years now since we’ve used it and we need to remedy that pretty soon. It was a quiet day for us with just my Mom and husband but we had a great day. Merry Christmas to all!

Merry Christmas and the crown pork roast looks grand! I am currently on a roast lamb trend and I am roasting a bunch of different root veggies along with lamb.
It’s strange that in a cattle state (OK), Walmart’s Neighborhood Market carries lamb and the selection is increasing! The packs I have been getting weigh about one pound, boneless leg/loin, and seasoned. Whenever I go to the Market,I look for the lamb as well as the one pound packs of ground lamb, bison, grass fed beef. They all go into the freezer The last time I was there, the selection included the traditional lamb chops as well as a larger piece of the lamb. I think it was a boneless leg, but I am not sure. I’ll get it next time. I’m searching for new lamb recipes.
I visited a dear friend this week and celebrated Solstice Day with the same dinner. My friend liked lamb but rarely cooked it. She was surprised when I took the meat out when it was still rare. A bit of resting and it was medium rare and perfect! I may have a convert to lamb. And we did look for the Christmas Star – saw it and went back into the house!

So glad it all went well for you. Yesterday the element in our oven went out. Was going to take it to Georgia’s to cook it, but decided to try the Power Cooker. Believe me the turkey was falling off the bone tender! Made the dressing in our toaster oven and it turned out great as well. I cooked the hot rolls a little too long and they were very brown, not burned, on the bottom. But all went well, could have been a lot worse!
