Chad and I talked about what our meat would be for Christmas. Vince and I generally fix a prime rib on Christmas Day. I have a ham in the freezer and I thought about fixing that but Vince left two of those manufactured looking hams here. I’ve had about all the ham I want for a while. Then I saw a recipe for a smoked pork crown roast. I asked Chad what he thought about that and he said something like “I don’t mind trying something new” so I called the local meat market and ordered one. I picked it up on the 23rd and that thing is a monster.
We use Cookshack smokers. We got our smaller one for Christmas in 2005 and have used the heck out of it and decided several years ago to get a larger one for doing sausage, turkey and probably pork crown roast though that thought never entered my mind.
When Vince was here, he set up the small smoker for me. The bigger smoker was on a heavy table in Texas. We brought the smoker but not the table so it’s sitting downstairs in the garage. I am not sure this monster piece of meat is going to fit in that small smoker. No way could I move the larger smoker out of the garage and since the garage is part of the house, I don’t think I should smoke meat in it inside the garage.
I brought one of the grates from the small smoker inside and held it up to the meat. I’l be surprised if it fits . . but I’m fixing to find out. Wish me luck!

I think you’re going to have a great dinner. My daughter and son-in-law fixed a prime rib last night and Potatoes Romanoff. Guests brought other side dishes (there was only 8 of us to keep numbers down). For the “manufactured” hams here is a suggestion – use your food processor to make ground ham and freeze in 1 pound baggies. Also leftover ham loaf can be frozen for individual servings
