Because I was quite concerned about that roast (which did fit in the smoker but it is wall to wall meat!), I made a gumbo on Christmas Eve. My backup plan was . . if the meat was awful, we’d have gumbo.
Chad and I were talking about me making a gumbo and I told him I wasn’t sure if I had any good sausage here. He said he didn’t think he had any left at his house either. When I started the gumbo yesterday, I went digging in the freezer and found a package of sausage Chad made last year. It was vacuum sealed and perfect!
I made a buttermilk pie for our Christmas dessert. We all love buttermilk pie.
It was a great Christmas! Being able to have Chad and his family here at whatever time works with their schedule . . that’s one of the great things about living close. When Chad worked for Walmart, he worked every single Christmas Eve and often had to go in on Christmas night to take down Christmas. With his current job, he usually has more time off around Christmas but with them working out of town so much, he didn’t get home til Wednesday night and there’s no way they would have driven to Texas after having driven 14 hours to get home so . . living here is just perfect.
I have a friend who moved away from her granddaughter at almost the exact same time we did and her granddaughter is just a week or two younger than Addie. She’s also moving back closer to them and I was telling her today that I felt like I was dying a slow death in Texas but being here where I get to see Chad, Nicole and Addie more, I feel like I’m living again!
Now . . sometime in the next few days, I need to get the tree down, get carpet vacuumed and move furniture to where I think I want it.

Aww, you’re making me hungry for gumbo! My husband does a guys weekend in Eunice every year. Last year they made sausage with figs in it. It is delicious! Had never heard of it. My husband said the guy made up the recipe. That crown roast looked fantastic!

You really don’t have to take the tree down until Epiphany which is January 6. That is the last day of Christmas. Actually the 12 days of Christmas start on Christmas day and go to Jan. 6. So you don’t have to be in a hurry. I will not take mine down until then. Take your time.
