I love carnitas and it’s one of those things I can cook and eat for a week and never feel like I’m eating leftovers. This is my favorite recipe and it’s done in the Instant Pot.
Every time I make this, I fully expect the error light to come on because I know my pot is too full.
But, so far, it’s always worked ok.
Today for our main meal, we’ll have beef tacos or carnitas in taco shells. I’ll use a bit of beef because I’m not sure Addie will like the carnitas. The rest of the beef will be used for making stuffed bell peppers.
I can use carnitas to make breakfast burritos with eggs, cheese, onions, cilantro. I can make Migas using carnitas. I can make quesadillas with carnitas, or stuff it into baked potatoes. One of my favorite things is a burrito with carnitas and avocado. I also like it with potatoes – kinda like a hash – potatoes, onions, peppers, cilantro and meat. And, if after a few days there’s still meat leftover, it freezes beautifully.
A pot of carnitas is definitely a good investment of my time.

If you’re making them yourself, make them as spicy as you want. As far as spicy, it calls for 1 poblano pepper and 1 large jalapeno pepper. Normally poblano peppers are not spicy but I always cut into it and taste it to be sure. Same with jalapeno peppers. Sometimes they are hot as fire and sometimes have little heat so I taste those. With Addie here, I used one small jalapeno and the poblano wasn’t hot and it wasn’t spicy to her at all.

The pot looks like it has apples and brown sugar. Or are my eyes deceiving me?

Your eyes are deceiving you. I think you’re seeing tomatillos and cumin.

Thank you. I printed this recipe this morning when I read this post. Now that I am in the kitchen, I actually read the recipe and when I saw that it called for all those tomatillos, I knew that was what was in the pot, not apples. Your brain tries to give you an explanation that makes sense to it, LOL!

I’ve been wanting baked apples ever since you mentioned apples in the pot but I don’t have any apples and am not going to the store and don’t need enough stuff to make a curbside pickup order so . . no baked apples for me.
