Yesterday I had planned to make Mississippi Pot Roast in the crock pot. For some reason, I like it better in the crock pot (or I thought I did). We had a late breakfast and I was so busy in the sewing room, it was after 2 and Vince asked what time we were going to eat dinner. Oh, no . . too late for the slow cooker so I put it all in the Instant Pot and by 3:20, it was all ready.
The recipe is so easy – Instant Pot or slow cooker. Here’s one – there are tons of them on the internet. I saw one the other day using chicken and I’d like to try that one too.
I was talking to a friend the other day and she said she was looking for a new stove top pressure cooker but all she could find was the Instant Pot. She didn’t want that . . not quite sure why because she has an electric stove. I kept my stove top pressure cookers to use on the gas stove if the power is out but we all know the rest of that story! I have Kuhn Rikon in several sizes and I’ll always keep those and hope Chad will use them some day when they’re passed on to him.
I can’t imagine cooking without my Instant Pot and I resisted it so many years!

Judy, my first time messaging you, have followed for years, love you and all you posts. I have to give you some background first. I am 78 yo, married in April-61 years. My husband supports my habits in all forms and we work well together, at least we used to. That ended when he developed serious dementia and a multitude of other medical issues. Our days are numbered now and it hurts a lot, pray about it a lot to make me a better caregiver.
The problem is our son came to live with us, soon after he picked up his 14 yo as well. He wants everything his way and just changes everything for his own way. I mean a lot in every room and outdoors. I try to ignore it, doesn’t work for me. He hates my yarn, like you I have similar amounts along with fabric, card making supplies, looms that I have in what I call the “playroom” (2 1/2 car garage we turned into MY room). He wants a semi ordered to dump it all (it is left over from my prayer shawl ministry I had for nine years and I do use it at times and likely more in the near future. My house is upside down and sideways making room for the son and grandson. I tell him this is my house/my rules==deaf ears, what is a girl to do?
He had had open heart surgery at our move 16 years ago, recovered nicely, I went back to work for nine years, he then put all the left over things from the move in a 24 foot metal bldg, stacked in such a way that I can not get into things.
Moral of this epistle, it is DLH, it is the 50 you son and 14 70 grandson. I have enjoyed you for so many years. keeps me inspired even if I cannot compete with you, I could have a few years back. Maybe some day I will again.

I used frozen turkey and stock and made a wonderful soup yesterday in the IP. It was so good. And fast!

I’ve used my Instant Pot exactly once. Don’t know why, I just never think to use it. But then, I don’t cook very often either!

i’m new to IP and mississippi pot roast was the first meal i made. a bit spicy but ok in general it made a lot for just 2 people so i had several portions in the freezer
wow! it gets warmer when reheated. i make extra mashed potatoes to disguise the hear. i’ve loved experimenting with it, just need to find a good way to do artichokes — getting tired of ruining expensive food.

The first time I made it, it was spicy even for me and we generally like spicy food so now I put fewer peppers and less pepper juice but I just love it!
The roast is good shredded and served on buns with cheese.

One of my last roommates was a food nutritionist. She told us that every time you reheat a dish that has peppers in it, it gets hotter. The pepper heat just increases each time. So I’m very careful now when I plan to reheat a dish with peppers in it again!

I didn’t know that. Thanks. I reheated soup for lunch that had jalapeno peppers in it and it was hotter than I remembered it being yesterday.
