Finally, the springerle cookie dough is mixed up and chilling!
It needs to chill at least two hours and I got a late start so about 6:30 p.m., I could roll it out but I’m going to leave it in the fridge overnight and roll it out in the morning. Once the cookies are cut, they have to sit out for 8 – 10 hours before baking so I’ll be doing good to get them baked tomorrow.
I made half the dough with anise oil and half with almond extract.
It’s so nice to finally be able to make these cookies again.

Yes, on a shelf in the garage, with the rest of my seldom used kitchen gadgets, which is where I thought I had put these when I last used them so . . who knows!
