I tend to do this with all things new and exciting but I can’t put “The Book on Pie” down. There are so many recipes I want to try. Once Vince goes back to Texas, I think I’m going on a pie for breakfast, lunch and dinner diet!
The method of pie crust making that the author uses is different enough from how I’ve always made pies that I want to test it before using it on our Thanksgiving pies. Really . . I just want a pie today! It isn’t like the turkey – if I ruin it, we’d be up a creek. If I made a pie using her crust technique and it turned out bad, I could just make a second pie but who wants to make the pie, then cut into it before Thanksgiving Day so . . today is the day to make a test pie.
I’ve been to the store for the last time, maybe til after the first of January. Every year, I buy everything we need by October 1 and then all we have to buy is milk, which I will pay extra for and buy it at the convenience store if Vince isn’t going to the store . . but Vince is always going to the store so I never buy milk at the convenience store.
With the move, I have been to the store way more than I prefer to have to go so yesterday, I told Addie . . I am not going to the store unless it’s curbside pickup until after Christmas but I really meant til probably mid-January.
Last night I was wishing I had Kerrygold butter for my pie crust and buttermilk so I could make a buttermilk pie. But . . too bad! I’d use regular butter and make my next favorite pie – a sugar cream pie.
Just as I had hoped, this morning Vince said “Do you need anything from town?” Oh, yes! He got new glasses and he isn’t happy with them and he wanted to take some things back to Home Depot that he bought and doesn’t need.
My list:
- Kerrygold butter – unsalted – 4 packags
- Buttermilk
- Turbinado sugar
- Bag of frozen peas (for my knee)
Addie asked for ebelskivers for breakfast so I told Vince we’d have breakfast for lunch so I can make them after he gets back. Addie will sleep til probably 10 so she won’t mind waiting a little while before she eats.

why do you like Kerrygold butter? It has the same butterfat content as other butters. I’m curious.
Judy Laquidara says
I’m not sure which butter you’re referencing that has the same butterfat content but most American butters have less butterfat than does Kerrygold. Some of the American butters are now producing “European” butter. Cabot and Land o’ Lakes butter do but they aren’t as easy to find as Kerrygold. Aldi carries Kerrygold where, at last our Aldi stores, don’t carry the Cabot or Land o’Lakes European style.
The extra butterfat in Kerrygold makes a difference in pie crusts plus I think it tastes better. For cooking, I use whatever butter I can find for a reasonable price but for buttering toast, pancakes, etc., my preference is Kerrygold. We had been using regular stick butter because I hadn’t bought Kerrygold since I’d been doing Walmart curbside and they hadn’t had it. When I did get Kerrygold again, even Vince said “This tastes so much better”. It probably is just a matter of personal preference but the Kerrygold seems to be just perfect for my pie crusts.

I have to make a pie shell for a chocolate cream pie. I’ll be following your pie making activities closely! My husband wishes we could find a good recipe for coconut cream pie, his favorite. Good Luck!

If you find one, please share it with me. I love coconut cream pie!

Have you always used butter in your pie crust? I am looking forward to seeing all of your creations! YUM YUM!
Judy Laquidara says
Not always but pretty much all the time.

Like you, I have been obsessed with “The Book on Pie” since you shared Erin’s video. I was in the middle of “downtime” (waiting for my services to be needed)at work, and watched the video as soon as you shared the link. Stopped on the way home and bought the book and watched all three of the additional pie series of videos that she’s posted so far by the end of the day. Going to make my first totally from scratch pie tomorrow.
