Wednesday morning I fed the sourdough starter and intended to stir up a batch of bread in the early afternoon. I never got around to it. That’s the day I made a loaf of white bread and cinnamon rolls. Thursday morning I fed the sourdough and made the dough but the kitchen was warm and it was rising way too quickly. I usually put it in the fridge about 6 p.m. and leave it overnight but by about 3 p.m., I felt like I needed to get it in the fridge.
This was early in the process but by mid-afternoon, this bowl was full of dough.
For the 500 grams of flour, I used 380 grams of all purpose flour and 120 grams of einkorn. I love that KoMo grain mill!
The bread turned out pretty. I left to go get Addie before it was cool; came home and had to quickly make dinner so we never cut it into last night. I’ll probably use it for toast with our breakfast this morning . . but that will be after Sleeping Beauty Addie wakes.
I’m still adjusting to the electric oven. By the time I’m confident with my baking in it, I’ll hopefully have a gas oven!

I got an induction range, it was less expensive than routing gas lines. I’ve come to like it better than gas, and it’s a lot easier to clean. If I want to char something I use the grill outside.

One of my main reasons for wanting gas is that I can still use it when the power is out and I couldn’t with induction.
The other main reason is that my All American canners can’t be used on induction so they wouldn’t be much better for me than a glass top.
