All of my posts today will not be about food . . maybe.
I love canning food. I do not like keeping food long term in the freezer. Things I don’t mind keeping in the freezer – ice cream (lots of ice cream and I have none at the current time!), a couple of steaks for grilling, a couple of whole chickens for roasting, breakfast sausage, ground beef, a roast or two.
There are some foods that work great for canning but not for certain recipes. Home canned chicken is one of my favorite things to have in jars. There is so much I can do with that. Chicken salad, a green salad with just shredded chicken, blue cheese crumbles and hot wing sauce for dressing, gumbo, soups, casseroles, enchiladas, tacos, etc. Canned chicken doesn’t work for grilled chicken, fried chicken, things like that.
Quilters are probably familiar with Marcia from Quilters Cache. She’s also a canner and last week (or as it earlier this week?), she canned beef stew. After seeing her stew, I wanted to make stew but I remembered that I had seen at least one jar of beef stew downstairs so I went down and grabbed it for dinner.
I made a roux with butter and flour, browned it a bit, added the jar contents and had myself a bowl of beef stew for dinner. I ate less than half the jar so I have another meal of beef stew coming up soon.
Having food in jars, ready to heat and eat . . that makes me happy!

I doubt if he is. He’s still eating good. He said he ate Brunswick Stew out of the freezer last night and it was delicious. When the good stuff runs out, maybe then he’ll come to MO.

And so much better for you than stuff you buy in cans that is full of preservatives! Even the frozen stuff has some preservatives in it!
