I’m often asked about the texture of freeze dried fruits and veggies. I absolutely love the freeze dried fruit – jackfruit, bananas, apples, figs, peaches . . there are others I can’t think of right now.
My peppers did great in the garden this year and I freeze dried a lot of them. The other day when making the burritos in jars, I used some of them.
The photo above is straight out of the vacuum sealed jar. I added a bit of room temp water and let them sit for a while, then drained them.
This is what they look like after soaking and draining. They’re crisp and taste almost exactly like they were fresh picked. Not all veggies do so well in the freeze dryer but peppers and onions are great!

Looks yummy!! I would have throught they would have been mushy and yukky. Nice that they turn out so well. Enjoy!!
