Yesterday I made the bread using the starter I brought back from MO. Last night Vince asked if it was ok to cut it and I said “sure” but wasn’t thinking about the taste being different. Right off the bat, he asked what was different .. said it tasted really good and that the sourdough flavor was better.
I made toast for breakfast and Vince again said he could tell the difference but I couldn’t. It tasted good and did a great job of rising, even higher than I prefer for my sandwich bread. I’ll make bread again tomorrow and it will be interesting to see how it tastes after having been in Texas for three days. I have no idea how long it takes to take on enough local yeast to change the taste. I’m sure I could google it and find the answer but right now . . packing trumps learning about yeast.
