Every time I fix spaghetti & meatballs, I feel like I deserve an award, or at least a pat on the back. I guess I’m one of those selfish kinds of cooks because I don’t cook things I don’t like . . except spaghetti and meatballs and, according to Vince, I don’t cook that often enough.
We had gone to the grocery store a couple of days ago and bought some of the meat that was on sale.
They had ground beef and Italian sausage on sale so . . how perfect was that for making meatballs.
Yesterday morning I divided up a big package of ground beef into three portions, divided the Italian sausage into three portions; froze two for future meatballs and made one portion into last night’s dinner.
I wish I liked red sauce. It’s sad that Vince loves it so much and I can hardly even stand to smell it. But, honestly — he could cook it himself if he really felt deprived, right?
Dinner was marinara with meatballs over pasta; steamed artichokes with garlic bread that we can agree was burned. There was also a Caesar salad that didn’t make it into the picture.
Vince was happy and I survived it. There’s a quart jar in the fridge and a quart jar in the freezer. He’ll be really happy when he learns about that.

Could you maybe thin sauce with some milk. When we were in Italy their sauce was lighter red and wasn’t as acidic. Seems almost like tomato soup. I didn’t like it as well but granddaughter did and it didn’t bother her stomach or throat. She grew up on Chef Boydree and that sauce is lighter too. Just and Idea.

I think Vince likes his traditional thick red sauce and I doubt I’d like it either way – it’s the oregano I think that I don’t like.

I bought don’t liike oregano a lot either. I got used to using basil which is sweeter and makes a great sauce. Wonder ifVince would like it.

Vince likes basil ok but he loves oregano so no, he wouldn’t like his sauce with less oregano. I could divide it at some point and put oregano in half and basil in half since I love basil. Thanks for the idea.

I’m with Vince on this one – I love pasta and red sauce. But could skip the meatballs.

If I hated making the meatballs that much, I would probably have made ALL the meat into meatballs and been done with it for a while. LOL

I don’t mind making meatballs – I just don’t like spaghetti sauce.

My Italian mother in law never used Oregano in sauce, only basil. If you can get fresh oregano the taste is SO much different. Just make sure its Italian oregano, its milder and sweeter than others, especially the Turkish and Greek kind.
When I make meatballs I’m like you, I make a bunch. But I bake them in the oven then add the pan drippings to the sauce and freeze the rest I don’t use.
