This is what you do when the okra is coming in non-stop!
For dinner yesterday I heated up the chile relleno casserole, heated up the black eyed peas and added more okra because we had eaten all the okra out of them the first time, and did my version of fried okra.
Vince said “It’s a good thing I like okra!” Yep, and it’s a good thing he’s not a pick eater. Leftovers and two sides of okra!

I love okra but all we have in the northeast is frozen, at least I’ve never found it fresh up here. Your meal looks delicious. I’d need dividers in my plate as I just cannot have my foods touching. Been like that since a kid. Weird.

My dear husband thinks the only thing they serve in Mexican restaurants is chile rellenoes. He never orders anything else. He LOVED the chile relleno casserole!
