Vince to the rescue!
Yesterday morning Vince had to go to town to get a new fuel line for something he was working on. He was going to go by the grocery store to get something else . . I wasn’t even paying attention to what all he was going to do.
I had a pork tenderloin defrosted to cook but didn’t have a clue how I was going to cook it. I looked at recipes and found one that sounded good and it was in the pressure cooker so I knew I could get the peaches finished before having to start dinner.
Vince came home and said he had gone by Aldi and found salmon marked down.
$5 off! He got a bit over one pound of salmon for $5.89. He bought three of them. They have a use by date of August 1 so he grilled one for yesterday’s dinner. It was delicious so we’re going to grill another today and one is in the freezer.
He was excited that he got meat for both our meals for $5 (and there was some left over). I was excited that I hardly had to cook. I baked sweet potatoes and fixed peas and okra from the garden. Tonight will be the same – salmon and a couple of sides. I have leftover red beans; maybe I’ll fix potatoes. I’ll come up with something.

Pork tenderloin in the slow cooker.
Pork tenderloin (not too thick)
1 jar of pork gravy (or turkey, or beef…doesn’t really matter)
1 can of Ocean Spray Berry Cranberry sauce (gotta be Ocean Spray)
Cook on low for 6 hours.
Makes a wonderful gravy. Mashed potatoes a pretty much a must!

I don’t have a pork tenderloin, a jar of gravy, or a can of ocean spray berry cranberry, but I am going to try that soon too! (I always have potatoes!)

I’m thinking the cream of celery soup would be just fine for gravy. =)

The grilled salmon sounds delicious. And so does the pork tenderloin.
