It wasn’t but a few years ago when my friends were telling me I needed an Instant Pot and I was saying “no, thanks!”, I have stove top pressure cookers.
Then I finally got an Instant Pot and now, hardly a day goes by that I don’t use it. Yesterday, I knew I was making Chicken Bacon Penne Pasta in a Garlic Cream Sauce for our dinner but I had other things to make in the Instant Pot. Thank goodness, I have two Instant Pots here (and two in MO).
I needed to make food for Rita so I cooked a batch of brown rice first, then I dumped that into a bowl and boiled eggs for Rita’s food in the same pot. Then I started our dinner in the other pot.
I’m not sure I’ve ever made pasta in the IP before and I know Vince doesn’t like mushy pasta so I was a bit concerned but it turned out perfect! There’s spinach and tomatoes in there, along with chicken, bacon, pasta and herbs/spices, cream and cheese.
It was definitely as good or better than most restaurant food and so easy with one pot to clean up. This recipe is going into my favorites!

This looks and sounds really delicious! My husband wouldn’t like it, but it would become one of my favorites I bet. My daughter uses her IP a lot too. She loves it.
