Maybe I’ll start a series of “Weird Meals” as we try to eat out of our freezer and pantry. Yesterday I used the following:
Pantry:
- 1 can of Rotel tomatoes
Freezer/Fridge:
- 1 pound of ground beef
- 1 pound Velveeta
- 1 package of pulled pork (leftovers I had frozen)
I heated up the pulled pork with onions and jalapeno peppers, spread it on the flour tortillas, added salsa, cheese and tomatoes. I used the ground beef and Velveeta to make chili cheese dip, served those with corn chips and had carrots on the side. Not the healthiest meal but it made enough for two meals for us and I used food out of the freezer!

Because we spend 5 our 6 months at each place where we live we do a fridge/freezer dive and empty twice a year. It DOES make for interesting meals. our kids like to reap the bounty of what use up though.

So I can freeze Velveeta??? In the box unopened or do I do something special to it

One time Vince went to the store and I needed 1 pound of Velveeta but all they had was a 2 pound box so I took the pound and used it, then I cut the remaining pound into 4 oz. pieces, vacuum sealed it and froze it and it worked fine so now I always keep several pounds in the freezer, frozen in 4 oz. pieces.

I only use it for homemade pimento cheese so I use the 2lb each time but its good to know. thanks

I make rotel cheese dip and pour it over our steamed broccoli or cauliflower. Just takes a very little bit to liven up the vegetable.
