With the recent extreme heat, the chickens have totally stopped laying. They had slacked off a bit but we were still eating eggs and then we ran out so we’re eating freeze dried eggs now.
Yesterday I wanted sausage, egg and cheese burritos for breakfast so that’s what I made for breakfast. Addie wanted bacon instead of sausage on hers so that’s what she got. Vince and I had a couple of pieces of bacon, along with or sausage.
I wanted pico on mine so I grabbed a jar of freeze dried pico too. After mixing water with the eggs, I scrambled them and they were just like regular eggs.
Sorry . . that picture looks pretty sloppy but it’s eggs, crumbled sausage, bacon, cheese and pico de gallo sauce.
Addie came in after I had made them and she said “Oh, I forgot to tell you I don’t eat the whites.” Hmmm . . looked at the jar of eggs and it looks pretty yellow so I told a little fib . . “Look! These are freeze dried it’s yellow. I don’t see any white in this batch.”
Vince said he would never have known the eggs were freeze dried so . . I guess we’ll eat freeze dried eggs til they’re all gone because, if the chickens do like they’ve done in previous years, they won’t be laying again til spring and they’ll belong to someone else by then.

That’s funny. It’s usually the yolk people don’t eat. I imagine she’s had undercooked eggs and doesn’t like the sliminess.
