For several days, Addie and I have been planning to make a pineapple upside down cake. I love them but . . I love most anything sweet.
This is the recipe I used and it was delicious!
I baked it in a cast iron skillet and Addie placed all the pineapple rings and cherries in the pot. I think she ate about twice as many cherries as went in the cake.
When I flipped it out of the skillet and onto the plate, she was so excited. I never thought about her never having seen a pineapple upside down cake. She exclaimed “Granny! We created a masterpiece!” I didn’t know she loves pineapple but she does, and, of course, she loves cherries and cake so she ate a couple of pieces. Add the sugar to the excitement about the fire last night and she was pretty wired!

It’s been years since I’ve tasted one of those pineapple upside down cakes. It looks delicious! Glad you didn’t have to evacuate because of the wildfire!

You are having a blast with that child – and building lots of great memories!!! The cake does look like a masterpiece. I haven’t had that in years. We’ll have 2 grandchildren this weekend while their parents go work on the MIL’s house so it can be sold.

That’s a dessert you pretty much have to make yourself…I can’t think of ever seeing it in a store (not that I look( or on a restaurant menu.
My first pineapple upside-down cake was called “sunset” u-d cake and included apricots. So pretty!
