Addie is somewhat of a picky eater. She will try most anything but she likes the foods they’re used to eating and some of what we eat is a bit different for her. Eggplant, squash, seared tuna are a few that come to mind.
On the days that I’ve made things like mac & cheese, the Shepherd’s Pie, the pizza, she eats so much I wonder if she’s going to have a belly ache later. The child goes non-stop. She’s never still. If she’s standing next to me talking, she’s jumping around. She seems to do ok in school, she can sit in her car seat for a 10 hour drive from Missouri to Texas so she can be still but I wish I had some part of her energy.
Every night when I tell her it’s time to go to sleep, she says “I’m wide awake and full of energy” and less than five minutes later, she’s sound asleep.
We usually have dinner around 3 p.m. or 4 at the latest. At their house, they eat late. Chad does most of the cooking and he doesn’t get home til about 6 so I try to keep something I can heat up for Addie around 6 or 7 and we usually stay up til after 10. Mini corndogs or cheese sticks with crackers or tater tots cooked in the air fryer. Then after her snack, we have a small bit of ice cream. Friday night we ate the last of our ice cream and I didn’t even think about dessert but after her shower, she came out and said “Did someone forget dessert?” I told her we were out of ice cream and she had the weirdest look on her face. She said “Granny! You never run out of anything!” But we did run out of ice cream.
I told her we’d set the timer for 5 minutes and we could each think of something that we could fix quickly for dessert. My idea was cinnamon toast and her idea was grilled cheese sandwiches. Hmmm . . I don’t think of grilled cheese sandwiches as dessert so we compromised — cinnamon toast for dessert last night and grilled cheese sandwiches for lunch today.
Addie loves Pioneer Woman’s tomato soup and I have everything on hand to make that so our meal today will be tomato soup and grilled cheese sandwiches and I need to come up with an idea for dessert. We have some over ripe bananas and Vince said he’ll make that with her today. If that doesn’t happen, we have brownie mix and she’d like to make that.

To have just some of the energy young kids have would be so great! My two youngest grandchildren are a little over two months shy of being seven, and they are energetic like Addie.

It seems like “sometimes” I have that energy (all in my head) and then I start moving and my mind says “you’re crazy”, LOL.

Let her make Cinnamon Rollups. Trim crusts off slices of bread. Flatten some with rolling pin or hands. Roll into a log. Brush with melted butter and roll in cinnamon sugar. Place on parchment lined cookie sheet and bake a few minutes til crispy. Kids love this. Keeps them busy for a while.

Oh, yes, I always have everything to make all kinds of cookies but we stay so busy all day and by the evening, a bowl of ice cream is a much easier option.

I just finished mixing up a double batch of choc chip cookie dough. I scoop it out into balls on parchment paper, pop a full sheet of them in the freezer. When they are frozen, I put them in a Ziploc bag. Wahlaa, instant desert! Preheat the oven to normal temp for your recipe, take out a few and pop them on a parchment lined cookie sheet, bake for normal time. Shocked me that they didn’t bake longer. I also bake them in the air fryer–2 each. Perfect desert.

I wouldn’t think of grilled cheese as dessert, either, but it doesn’t have too much sugar, at least. =)
