I can’t decide if I’m super lazy or super smart . . I think I know the answer but I’d rather it be the other!
I hardly ever cook anything that I’m not trying to maximize the number of meals I can get from one dish.
For the past few weeks, I have been wanting mac & cheese. I love Patti Labelle’s Mac & Cheese and that’s the recipe I’ve made for years. There have been times when I’ve made half the recipe. The whole recipe makes a 9 x 13″ dish full. I decided to go ahead and make the full recipe and freeze the leftovers. I vacuum sealed three bags of mac & cheese. I think each bag will be enough for two meals, plus I saved enough for a couple of meals in a zipper bag in the fridge.
I also made a squash casserole with squash from the garden. It was a small casserole so I only got one bag for the freezer, and a zipper bag for the fridge.
Having that food in the freezer, along with other things I’ve made and frozen, gives me at least every fourth week that I don’t have to cook but can simply heat up leftovers from the freezer. That helps so much, especially during this time when the garden and fruit trees are producing and that has to be processed too.
Last, I made more food for Rita and, because all the containers I use for her food are full, I had to put some of that in vacuum seal bags.

It’s just food .. no seasoning so we wouldn’t get far with it but we also wouldn’t get sick.

That sounds super smart to me. I have heard that lazy people are smarter – they figure out economical ways to do things – economy of effort, I mean.
