We have a chance of storms tonight so Vince wanted to get the onions out of the ground.
We have a lot of purple onions. They’re really pretty this year.
The last time I was out there he had one more row of yellow onions to get out.
This one is a crazy one!
These will mostly all be freeze dried and there should be enough to last us til next year’s crop is ready.
Onions are one of my favorite things to freeze dry because they work so well! I can soak them in a bit of water and they’re just like fresh and I can saute them in a bit of butter and you’d never know they weren’t fresh. Most of them I chop but some I slice and can use those to caramelize and use on burgers or over steaks.
I’ll let them dry for a few days and then I’ll start chopping onions!
We bought this little wagon several years ago and use it all the time in the garden. It’s perfect for bringing in onions and garlic.

Do you grow sweet onions? My stomach doesn’t do well with regular onions, but sautéed sweet onions are like candy to me. Walla Walla, Visalia and Maui sweet onions are delicious.

We grow a few sweet onions. They’re mixed in with the yellow onions but are easy to tell the difference because they’re kinda flat . . not as ball shaped as the regular yellow onions.
